Thankful Thursdays

I am thankful today for my husband choosing Infectious Disease specialty instead of Neurosurgery, which was his original plan, since its what he had been doing in our country before he came to the US and had to start from scratch. I have gotten a little taste of what that would have been like this week and will continue to for the next 3 weeks because he is doing an elective in Neurosurgery. He has been in the OR and hasn't been able to answer if I call and has had to stay later at the hospital longer than expected due to a surgery. By no means do I think that our schedule is great but I think that if he would have chosen Neurosurgery it would be 5X worse. Wordless Wednesdays Swimming Dog

On Sunday when we were leaving the beach, on our way back to the car, we saw a dog jump to the water and then the owners put down a ladder to let him climb back up. It was obvious that he did this often and it was really amusing to us. Especially the girls.

Un-bitting the bullet

Update: I think the budget fairy was watching out for me and I took it as a sign. I went to Starbucks (which had like a million of them on Sunday) and they were sold out. No yummy fancy coffee for me.

Turned out to be a really good thing because when I took my car for an oil change today, they notified me that I needed new breaks and boy was I thankful that I didn't splurge on that machine yesterday.

I am going to bite the bullet

My parents bought me a really nice esppresso machine from Starbucks 3 years ago, a few month ago, while I was cleaning it, I pulled a tube and it broke. I was so upset about it, but decided against buying a new one. However this weekend we went to Starbucks and I saw one on sale. Its still pretty pricey but I figured that I am spending a lot of money going into Starbucks for coffee instead of having some at home. So after careful consideration I am going to march myself into Starbucks today and "invest" in a new espresso machine. I can't wait!

Our day today

Today has been a gorgeous, in the high 80's. Dr.D was on call today and the girls and I took him some Starbucks coffee to get him through the day. After lunch I went outside with the girls thinking we would be outside all day but they are such girly girls, we didn't make it one hour outside because of the bugs and bee's. Its so funny because bugs kept landing on top of M's dress and she would come over to me screaming and asking me to take it off and I would scream (louder than she was)and with my phone try to swing it off, anyone watching us must have gotten a good laugh. We came back inside the house and the girls played in there room while I cleaned the house. We watched a Scooby Doo Movie together and then I prepared dinner (spaghetti with ground beef) and we ate. The girls wanted ice cream for desert, so we took an after dinner walk to Wholefoods and picked up ice cream. As I write this they are having ice cream with brownie and watching The Lion King part 2 Simba's Pride (lucky girls). As for me, I am off to join them :)

Thankful Thursdays

I am thankful for being able to go out on a much needed date tonight.The babysitter will be here at 6:30 PM and I will meet Dr.D around 6:45pm for dinner. We still don't know where we will eat but that doesn't really matter, besides there's a ton of little restaurants around, so I'm sure it wont be difficult to choose. Im so excited, I cant wait...

Just another Monday

I used to be more of a "morning person", but now mornings are just way too hectic. Without a doubt Monday mornings are the craziest. Today L had to take coins to school, which of course I forgot all about until 8am (30 minutes before we had to run out the door). I searched everywhere around the house and gathered almost all the ones I needed. I had 25 pennies - 4 quarters - 20 dimes, but I only had 17 nickles, therefore 3 were missing. I figured I would probably have 3 nickles in the car, so I told L to put the bag of coins in her back pack while I packed her lunch and we headed out the door. When we got to school, as I waited in the line of cars, I found the 3 nickles and told L to put them with the other coins. That's when she told me "Mommy I cant because the bag isn't in my back pack, its at home". Initially I told her "ok well you tell the teacher you left them at home", but then I remembered how embarrassing it was when that happened to me, so I got out of the line of cars and drove back home, ran inside grabbed the bag and then drove back to school making it just in time for her to not be late. Hectic yes! but so worth it, right before getting to school L told me "mommy you are such a good mom thank you for going back home, I love you"

Perfect Sunday

Dr.D was home and that just makes the day a lot nicer as is, but it really was a great Sunday. We gave the girls breakfast and we went on a bike ride. When we got back showered, got dressed, and walked to wholefoods and picked up just enough groceries to comfortably carry them home. We ate lunch, watched a movie, and then spent the rest of the day just hanging around the house. Dr.D and I played poker while we waited for dinner to be ready (I made lamb, rice and lentils). When we were done eating the girls and I baked a chocolate cake, which we enjoyed with ice cream right after singing happy birthday to Dora with a pink candle because M insisted that it was her birthday. It was a perfectly lazy Sunday.

Runny Nose Changes Plans

Today we were supposed to go to a birthday party for adorable twins turning one, however we had to cancel because M is sick with a cold. The girls were really sad that we couldn't go. L kept asking me if M was all better from the moment she woke up until around 1pm when I told her that even if M would have been feeling better we couldn't go because the party was already over. M's cold started on Thursday night she had a runny nose before going to bed and then around midnight she woke up crying with a stuffy nose and running a fever. On Friday we took her to the pediatrician just to be on the safe side and he said its just a cold, so we have to let it run its course. We went out for a short walk in the late afternoon because the weather was gorgeous. Dr.D ended up carrying M so the walk didn't last long, but it was nice while it lasted. Hopefully tomorrow M is feeling better and we can enjoy this weather, which I had been totally craving.

Thankful Thursdays

Every night before dinner we all hold hands and say what we are thankful for. It usually takes 2 minutes. M goes first and she usually says " I am thankful for mama making this delicious food" L follows by saying " I'm thankful for mama making this delicious food and for all of us being healthy" and then Dr.D and I usually say just about the same thing " We are thankful for being able to enjoy this food together and for our health and happiness".
Depending on the day we get more elaborate, but even when its just those simple things, it is so nice to take a moment and acknowledge that everyday there are things to be thankful for.

Weather please cooperate

Its April and I had all these beautiful plans of dropping L off at school and instead of getting in the car line and having her jump off the car, I would park as far as possible and have a little morning walk with the girls. I also thought that afterwards I would stop by Starbucks and get myself a java chip frappuccino and head over to the park with M. Mother nature obviously had other plans because it has been too cold, way too cold for a frappuccino (I have had to settle for an extra hot mocha)and too cold for walks and parks (instead you will find me walking around the mall or in the bookstore). Mother nature I want nice weather! Please... Pretty Please... With A Cherry On Top...

Happy Easter

I have had a great Easter Sunday. We were able to sleep in until 9am which in a household with small children is a luxury and I was able to spend the day with my favorite people in the world: Dr.D, L and M. I had a talk with the girls about the meaning of Easter and at the end of our conversation (just when I thought they understood everything) they said mommy I get it, Jesus is alive so he makes egg hunts for us and he tells the Easter bunny to bring us baskets. I don't think they quite got it, maybe next year.

Recipe Imperial Rice

Imperial Rice


4 cups of rice
8 cups of chicken broth
2 packets of sazon goya with azafran
3 garlic cloves minced
1/2 an onion sliced
1 red pepper sliced
6 skinless boneless chicken breast cut into small/medium pieces
1 can of tomato sauce
salt and pepper
3 tbs of olive oil
deli ham
deli swiss cheese
1 can of sweet peas (optional)

In a pot cook the 4 cups of rice using 8 cups of chicken broth, add one packet of sazon goya with azafron, 1 tbs of olive oil and salt/pepper to taste.
Optional: add the can of sweet peas to the rice after its cooked

In a skillet put 2tbs of olive oil and throw in onions and peppers cook them for about 2 minutes, add the garlic and the chicken, then salt and pepper to taste.

Once the chicken is cooked through add can of tomato sauce and 1 packet of sazon goya.

Preheat over to 350 degress

In a large oven safe dish put half of the rice spread it out then add the chicken mix and spread it out and then the remainder of the rice.

Cover the rice with one layer deli ham, followed by a layer of swiss cheese, enough to cover the entire area, then put it in the oven until the cheese melts.

My family really enjoys this recipe.

Thankful Thursdays - Husband

I am a chicken when it comes to my kids or myself for that matter, getting hurt or being sick. Which makes me so thankful that my husband is a Doctor. For example: Last night while we were having dinner M fell forward and hit her chin with the table causing her to bite her tongue (hard!) and she bled a lot. I was a mess and there was no way I was going to look inside her mouth. Dr.D, ever so calmly, asked M to open her mouth inspected it, poured some sugar onto her tongue and told her to keep her mouth closed, end of story. He is my hero, never more so than when Mia was diagnosed in November with Moyamoya, he knew just what to do, he made all the right calls, got us an appointment with the top surgeon for Moyamoya in under a day, spoke to the doctors and asked all the right questions, he was so strong. I know that inside he was just as scared as I was, but one of us had to be brave in a moment where everything seemed to be falling apart. I am so thankful and proud of the husband that I have. I am truly blessed to be his wife.

1. I am a perfectionist and I always put a lot of pressure on myself.

2. I love to read just about anything.

3. I love watching romantic movies, my favorite is "The Notebook"

4. When I moved in with my husband I was working and he was studying, everyone I knew had something negative to say about it. I'm glad I didnt listen because it was the best decision I ever made and all our sacrifices have been worth it.

5. I complain about not going out alone and having "me" time, but I secretly rather spend time with my husband and kids, than doing anything else.

6. I love to cook, its like therapy for me.

7. Last year really changed my outlook on life and made me realize what really matters and what really doesnt.

8. I believe in the power of prayer.

9. Last summer I went to wholefoods everyday, I would walk there buy just what I needed for the day and then walk back home, it was great...

10. I really enjoy making things from scratch.

11. I love being a stay at home mom, even though I do admit that some days are harder than others.

12. I have to have the house neat and clean with everything in its place everyday by dinner time, even if it only last for about an hour.

13. I have dessert after every meal, including breakfast.

14. I am terrified of dogs.

15. I record the shows Desperate Housewives, Dancing with the Stars and Grey's Anatomy because I love to watch them, but I hate commercials.

16. I dont like eating out.

17. I have a great babysitter but I dont use her often enough.

18. I try to enjoy the simple things in life, for example: every smile, hug and I love you from my girls.

19. I feel so proud when I peek into my girls room and hear L reading a story to M.

20. I drink way too much coffee.

I have no control

I am really good about what I eat, I try to keep it healthy and stay aways from the "not so good for the figure food", that is with the exception of ice cream. I don't know what it is about ice cream, but once I take my first spoonful there is no going back and before I know it I have consumed the entire pint. I try not to have any at home because if its in the freezer I will eat it. I even reason with myself saying that I might as well just eat the entire pint and get it over with, because I know that I wont stop thinking about it until its gone. I just have zero control when it comes to ice cream. I happen to have ice cream in the freezer right now, I sat down to write this hoping that it would make me realize that I need to put a stop to my little addiction, that I would say "Ok Mrs.D, yes there is ice cream in the freezer, but you will not eat it". Unfortunately, the opposite has occurred and I am off to the freezer to finish my pint of "chocolate, chocolate almond ice cream".

*Yes, I am absolutely aware I have a problem, but it so good!!!

Egg hunt at the beach

We had a great day today, we went to an egg hunt at the beach. M was really excited to go and she didn't stop talking for the entire 45 minutes it took us to get there. We had to park three blocks away and walk because we couldn't find parking any closer. When we got to the boardwalk it was difficult to walk through the crowd of people, it was so full. We went to the area designated for the kids 0-4 and waited patiently (well as patiently as you can possibly wait with a 4 year old) for the egg hunt to begin. They announced the rules: due to such a high volume of people, every child was only allowed to pick up 3 eggs. Then at the count of three they let us through the yellow tape. M ran as fast as she could and picked out her 3 eggs in under a minute and then continued to run toward the ocean.

She loved the waves and ran toward them but I made sure to keep her out of the water because it was freezing cold.

Afterwards we walked on the boardwalk for a little while and then went back on the sand. Dr.D and M played in the sand, they made a sand car and then we all picked shells.

On our way back home we stopped for coffee and M fell asleep for the entire ride home. I considered it a successful Sunday.

Honestly is always the best policy

I have always been really annoyed at people who lie, for one there is never a good enough reason to lie and second sooner or later the truth always comes out, therefore the person lying ends up looking like an ass.
This morning I patiently waited for Dr.D ,while he ran in the treadmill, to have breakfast. When he finished running, he went into the kitchen poured himself coffee and served himself cake for breakfast. I was in the living room and I could hear him in the kitchen so I said "you are so mean I have been waiting for you to have breakfast and you go into the kitchen and selfishly have breakfast alone without thinking of waiting for me" to which he answered (this is funny because his mouth obviously full while he spoke) I'm only drinking coffee. Then of course I went into the kitchen and the fork and empty plate are in the sink and he says "oh that wasn't breakfast", hmmm (insert eye roll) right...

***He later apologized for lying and admitted it was a dumb thing to do, because a lie is a lie no matter how small.

Awake all night

M had given up on naps a long time ago, amazingly she has been napping again for the past three days. It is awesome and I am really enjoying it, because of napping during the day she is waking up earlier than usual (6am versus 8am). I don't have a problem with it at all, I will take early wake up with nap rather than later wake up and no nap any day! Now coming to the funny part. Due to the fact that at 6am it is still dark outside M wakes up saying "I'm not tired I want to stay awake all night", of course we humor her and say "ok fine as long as your good and listen to mommy and papa you can stay up all night" and she is absolutely ecstatic. Mornings have been so much more pleasant during the last couple of days. As an added benefit, I am waking up earlier too, so I'm getting a lot more done in the morning. I really hope we keep this up!
